Christmas Dinner

Our Christmas dinner encompassed the traditional Puerto Rican Pernil. Pernil is a slow cooked pork's shoulder with tender meat and crispy skin. The skin is my favorite part, and also the unhealthiest part of the meat. We prepare Pernil for special occasions, so this is not only a dish prepared for Christmas. We had amazing side dishes to complement the Pernil, such as arroz y frijoles, chicken, avocado, and tomato slices.
